Vegan Strawberry Cupcakes with Buttercream Frosting
My sweet cousin & family business partner, Taj, celebrated her birthday today & I surprised her at the office with Champagne & a tray full of these luscious Strawberry Cupcakes.
This recipe is from The Skinny Bitch Ultimate Everyday Cookbook & I am so happy to report that it was written to perfection (I’ve had a few mishaps with their recipes in the past) & the cupcakes were fabulous! The cakes were ridiculously moist from a puree of silken tofu & fresh strawberries, & not overwhelmingly sweet. The frosting was a little thinner than I prefer, but still “buttery” & silky smooth. While nothing compares to the recipes found in VCTOTW (I heart Isa), this is certainly one that will stay in my repertoire.
